* when resting folds, leave crack in oven
* more flour on proving dish
* prove in fridge
* corn meal bottom of bake dish no stick
*no extra flour

1. make dough, let sit for 30
2. add starter, 1/4 cup water save 1/4 cup
3. smush, scoop slap
4. 20 mins rest
5. Add salt water
6. slap fold
7. Rest 15 mins
8. 4 folds over 2 hours.
9. shape basic, rest, final
Dust top of shapes in order to keep no stick on basket
